The `Bergkern´ from Aussee

Natural salt, also called Bergkern (primal rock salt) from Aussee, is still extracted from the salt mine of Altaussee in the traditional way of mining. This is in whole of Austria the only deposit, where direct carving from the mountain is possible, because the approximate share of salt in the rock is over 98 %. The rest of 2 % consists of trace elements like ferric oxide, calcium, magnesium and many others.

After the rock salt has been broken out of the mountain it is after a primary selection transported to upper-ground. Here the rock salt gets sorted by hand and then, related to the different possibility of usage crushed and grinded.

In the Salzwelten Hallstatt, Salzburg/Bad Dürrnberg and Altaussee the visitors get guided to the salt. The guest will experience the mountain, the history and the salt with all senses. Also the Salzkammer (salt chamber) has devoted herself to make the matter (subject, element) salt, and especially the Austrian Naturals Salt with its complexity, accessible to everybody.

The rock salt from Altaussee is known for its incomparable taste which guaranties a round and full culinary delight that even lets every toque chef us it with pleasure, because it emphasizes the quality of high-grade ingredients. The unmistakeable appearance (look), its brown colouring, is a result of the high content of iron and a well-balanced mix of other minerals.

One can experience salt in its various possibilities of usage. In the culinary regions the qualities of salt are known well enough. In Salzkammergut (especially in Bad Ischl and Bad Aussee) the salt treatments in the health-resorts have a tradition since over 150 years. Relatively new are the different cosmetic applications. But salt is also writing history and stories, some of them are told since year hundreds.
